My favorite rice

Curried rice with raisins and almonds

1 yellow onion, diced
3 T olive oil
1 c long grain white rice
2 t curry powder
1/2 t salt
2 T butter
1/2 c raisins
1/4 c sliced almonds
2 c chicken broth

Preheat oven to 375.

Heat olive oil over medium heat. Add onions and cook until soft. Add rice and cook for 3 minutes. Add raisins, almonds, curry powder, salt, and butter. Cook for an additional minute.

Transfer to buttered casserole dish. Add 2 c chicken broth and stir.

Cover and bake for 1 hour.
